Entry No.19

When my daughter was born a month early and I had to have an emergency c-section I was out of commission for a while. I was very lucky to have my in laws around to help for six weeks! They were such a big help that I don't know how I would have managed without them. My favorite part of their stay was all the home cooked meals and one of those meals stands out above the rest. My mother-in-law, Carole, made the most delicious spaghetti with tomatoes I have ever had. She said she got the recipe from People magazine from all places and that she read this particular pasta dish was the favorite of Jay Z and Beyonce (oh how I hate to name drop) who order it to go from Scarpetta in NY. This recipe is so easy to duplicate that it can hardly be called a recipe. She has made this a few times and I can hardly wait for tomato season to arrive so I can make it for my little girl. And I just found out that there is a Scarpetta restaurant in Beverly Hills. Carole and I are going to have to hit this restaurant during her visit in a couple of weeks. If this simple pasta dish can be that good I bet the rest of the menu is to die for.
